Roses in December. Provence rose, Rose de Mai, Cabbage Rose, or Rosa × centifolia is a rose originally from Holland, bred to be tough and winter-hardy. 

Probably one of the biggest struggles a florist can have is sourcing local materials in the winter months. I take it as a good challenge, though. You notice little treasures that you would have otherwise passed over with the distractions of showy summer blooms.
